Dish Of The Month

Cromer crab with linguine, chilli, tomato, coriander and seared squid

For 4 people
1/2 packet linguine
2 medium squid
2 tomatoes
1 red chilli
coriander
extra virgin olive oil
1 clove of garlic, crushed
1/2 lemon
salt and pepper

Cook your linguine al dente in boiling salted water and drain.

Pick the crab from the shell, finely chop a red chilli, de-seed and dice the tomato.

Pour a little olive oil in a frying pan and quickly fry the garlic and chilli adding as much or as little as you like.  The add the crab, tomato, coriander, lemon juice and mix into the linguine until it is coated with crab.

Coat the diced squid in salt and pepper.  In a separate pan, heat some more oil and add the squid.  Fry for 20-30 seconds depending on thickness.

Divide the linguine between four plates, and add the squid on top.

Drizzle with some extra virgin olive oil and serve.
